Avocado, Spinach & Feta Spaghetti
This simple spaghetti is quick and easy to throw together for a weeknight meal.
- 150g spaghetti
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 avocado, sliced
- Juice of 1 lemon
- 2 tbsp pine nuts
- 1 packet Culinary Co. Premium
Vegan Dairy Free Feta, diced
In a large pot with boiling salted water cook spaghetti pasta until al dente. Rinse with cool water. Drain well.
In a large bowl mix together spinach, feta, oregano and pine nuts.
Add spaghetti and toss through with olive oil and lemon juice.
Top with avocado and a little extra dried oregano.
